Mediterranean Lemon Chicken Bowl

A perfectly balanced meal featuring juicy lemon-marinated chicken, a crisp Greek salad, and creamy garlic yogurt sauce. Ideal for meal prep or a healthy dinner!
Ingredients (Serves 2)
For the Chicken:- 400g Chicken Breast (cubed)
- 3 Tbsp Greek Yogurt
- Juice of 1 Lemon
- 3 Cloves of Garlic (minced)
- 1 Tbsp Italian Mixed Herbs
- 1 Tbsp Paprika & 1 Tsp Chili Powder
- 2 Tbsp Olive Oil
- 8 Cherry Tomatoes (halved)
- 1/2 Cucumber (chopped)
- 50g Feta Cheese (crumbled)
- 1/3 Red Onion (sliced)
- Fresh Parsley, Balsamic Vinegar & Olive Oil
- 5 Tbsp Greek Yogurt
- 1 Clove of Garlic (grated)
- Squeeze of Lemon
Cooking Instructions
- Marinate: Mix all chicken ingredients in a bowl. Let it sit for at least 15 mins for the best flavor.
- Cook Rice: Prepare 125g of uncooked rice according to package instructions.
- Cook Chicken: Use one of the methods below until golden and cooked through.
- Assemble Salad: Toss tomatoes, cucumber, onion, feta, and parsley with vinegar and oil.
- Serve: Layer rice, salad, and chicken in a bowl. Drizzle generously with the garlic yogurt sauce.
