Mediterranean Lemon Chicken Bowl

A perfectly balanced meal featuring juicy lemon-marinated chicken, a crisp Greek salad, and creamy garlic yogurt sauce. Ideal for meal prep or a healthy dinner!

Ingredients (Serves 2)

For the Chicken:
  • 400g Chicken Breast (cubed)
  • 3 Tbsp Greek Yogurt
  • Juice of 1 Lemon
  • 3 Cloves of Garlic (minced)
  • 1 Tbsp Italian Mixed Herbs
  • 1 Tbsp Paprika & 1 Tsp Chili Powder
  • 2 Tbsp Olive Oil
For the Greek Salad:
  • 8 Cherry Tomatoes (halved)
  • 1/2 Cucumber (chopped)
  • 50g Feta Cheese (crumbled)
  • 1/3 Red Onion (sliced)
  • Fresh Parsley, Balsamic Vinegar & Olive Oil
The Garlic Sauce:
  • 5 Tbsp Greek Yogurt
  • 1 Clove of Garlic (grated)
  • Squeeze of Lemon

Cooking Instructions

  1. Marinate: Mix all chicken ingredients in a bowl. Let it sit for at least 15 mins for the best flavor.
  2. Cook Rice: Prepare 125g of uncooked rice according to package instructions.
  3. Cook Chicken: Use one of the methods below until golden and cooked through.
  4. Assemble Salad: Toss tomatoes, cucumber, onion, feta, and parsley with vinegar and oil.
  5. Serve: Layer rice, salad, and chicken in a bowl. Drizzle generously with the garlic yogurt sauce.
