Ingredients
- 2-3 cups Cooked Sushi Rice
- 2 tbsp Rice Vinegar (plus a pinch of sugar and salt)
- 2 cups Imitation Crab (finely shredded)
- ½ cup Kewpie Mayo (Japanese Mayo)
- 2 tbsp Sriracha (adjust for heat)
- 4 oz Cream Cheese (softened)
- Furikake (Japanese rice seasoning)
- Nori sheets (cut into small squares)
- Toppings: Sliced cucumber, avocado, or green onions
Directions
- Season the Rice: Mix the cooked sushi rice with rice vinegar, sugar, and salt. Press it firmly into an even layer in a 9x13 baking dish.
- The Furikake Layer: Sprinkle a generous amount of Furikake seasoning over the rice layer.
- The Topping Mix: In a bowl, combine the shredded imitation crab, cream cheese, Kewpie mayo, and sriracha. Mix until creamy and well combined.
- Assemble: Spread the crab mixture evenly over the rice layer. You can add another sprinkle of Furikake on top if you like.
- Bake: Bake in a preheated oven at 375°F (190°C) for about 15–20 minutes, or until the top is bubbly and slightly golden.
- Drizzle: Remove from the oven and drizzle with extra Kewpie mayo and sriracha.
- Serve: Scoop a spoonful of the warm sushi bake into a small nori sheet, add a slice of cucumber or avocado, and enjoy!
