Ingredients
- 1 tablespoon unsalted butter
- 3/4 cup panko breadcrumbs
- 2 cups dill pickles, finely chopped (about 10-12 pickles)
- 2 cups sour cream (full fat for best texture)
- 1 packet (1 oz) ranch seasoning mix
- 2 tablespoons pickle juice (optional, to thin)
- 2 tablespoons fresh dill, chopped (for garnish)
- Potato chips, ruffled chips, or crackers for serving
Directions
- Heat a medium skillet over medium heat. Add butter and let melt.
- Add panko breadcrumbs to the pan. Toast 3-5 minutes, stirring often, until golden brown and fragrant. Remove from heat and set aside.
- Finely chop dill pickles and pat dry with paper towel to avoid watery dip.
- In a large bowl, combine sour cream, ranch seasoning, and chopped pickles. Mix well.
- Stir in 2/3 of the toasted breadcrumbs (reserve rest for topping). If dip is too thick, add 1-2 tablespoons pickle juice.
- Transfer dip to serving bowl. Top with remaining toasted breadcrumbs and fresh dill.
- Chill 15 minutes for flavors to meld, or serve immediately.
- Serve with ruffled potato chips, pretzels, or veggie sticks.
