Soft High-Protein Cottage Cheese Skillet Flatbread

Ingredients

  • 1 cup cottage cheese
  • 1 cup all-purpose flour (or whole wheat flour)
  • 1 egg
  • ½ tsp baking powder
  • ¼ tsp salt
  • 1 tbsp olive oil (for cooking)
  • Optional: chopped herbs such as parsley or chives

Directions

  1. In a mixing bowl, combine cottage cheese and egg, stirring until well blended.
  2. Add flour, baking powder, and salt to the mixture.
  3. Mix everything together until a soft dough forms. If the dough feels too sticky, add a little extra flour.
  4. Divide the dough into 4 equal portions.
  5. Roll each portion into a small flat circle about ¼ inch thick.
  6. Heat a skillet over medium heat and lightly brush with olive oil.
  7. Place one flatbread in the skillet and cook for about 2–3 minutes on each side until golden brown and cooked through.
  8. Repeat with the remaining dough portions.
  9. Serve warm with your favorite toppings such as avocado, eggs, vegetables, or grilled chicken.
