1 ½ cups all-purpose flour
1 teaspoon baking powder
½ teaspoon baking soda
¼ teaspoon salt
½ cup unsalted butter, melted
¾ cup granulated sugar
2 large eggs, room temperature
½ cup milk
1 teaspoon vanilla extract
1 tablespoon lemon zest
1 cup mixed berries (strawberries, blueberries, raspberries)
1 tablespoon flour (for coating berries)
2 tablespoons brown sugar (for topping)
Powdered sugar for dusting (optional)
Directions
Preheat the air fryer to 320°F (160°C) for 3–5 minutes.
Grease and line a 6-inch round cake pan that fits inside your air fryer basket.
In a bowl, whisk together flour, baking powder, baking soda, and salt.
In another bowl, mix melted butter and sugar until smooth and creamy.
Add eggs one at a time, then stir in milk, vanilla, and lemon zest.
Gradually fold the dry ingredients into the wet mixture until just combined.
Toss the berries with 1 tablespoon flour to prevent sinking, then gently fold them into the batter.
