- ¾ cup granulated sugar
- 2 large eggs, room temperature
- ½ cup milk
- 1 teaspoon vanilla extract
- 1 tablespoon lemon zest
- 1 cup mixed berries (strawberries, blueberries, raspberries)
- 1 tablespoon flour (for coating berries)
- 2 tablespoons brown sugar (for topping)
- Powdered sugar for dusting (optional)
Directions
- Preheat the air fryer to 320°F (160°C) for 3–5 minutes.
- Grease and line a 6-inch round cake pan that fits inside your air fryer basket.
- In a bowl, whisk together flour, baking powder, baking soda, and salt.
- In another bowl, mix melted butter and sugar until smooth and creamy.
- Add eggs one at a time, then stir in milk, vanilla, and lemon zest.
- Gradually fold the dry ingredients into the wet mixture until just combined.
- Toss the berries with 1 tablespoon flour to prevent sinking, then gently fold them into the batter.
- Pour the batter into the prepared pan and sprinkle brown sugar on top.
- Place the pan in the air fryer and cook for 22–26 minutes, or until a toothpick inserted comes out clean.
